I’ll probably disappoint you badly with this next confession.
There are some days when I don’t crave peanut butter or chocolate. And now you’re: “Ummmm, I don’t care, but thanks for this super boring story.” You’re very welcome. And you’re in luck ‘cause it’s not over yet.

What do I do when I don’t eat peanut butter or chocolate? Eat fruit? Please. Sell that advice to someone who’s never had taste buds.
On days when chocolate and peanut butter are not my choice I crave something coconut-y like these coconut cream oatmeal bites.
(Now you’re awake, right?)
No bake and very easy to make (I will be a rhymer one day, mark my word!). Light, creamy, not overly sweet, just sweet enough with a little hazelnut in the middle to add some crunch and cuteness to the whole thing. You can have them as dessert, but also as breakfast (maybe some more of them).
You’ll need to grind your oats into flour and you can also grind coconut flakes into flour if you don’t have coconut flour. Other than that you’ll need some small silicone cups (for baking, not for the bra), but you can also roll the mixture into walnut-sized balls, if you don’t have silicone baking cups.
I only have those, because they were on sale. Before they were on sale I always said they’re not safe for baking.
Let’s get back to these super tasty coconut cream bites.
They are high-fiber and high-protein, contain no oil and just 1 Tbsp of honey to sweeten (or other liquid sweetener if vegan). Make sure you use gluten-free oats to make these gluten-free. Also I haven’t tried, but I’m pretty sure you can substitute oats with coconut flour to make these coconut bites paleo AND gluten-free (you just might have to add some more coconut cream).
- 1 cup oats, ground into flour
- ½ cup coconut flour or coconut flakes
- 3 Tbsp coconut cream (top part in a coconut milk can)
- 1 Tbsp honey
- Optionally: 1 tsp vanilla
- 9 hazelnuts
- Process ground oats, coconut cream, honey (other liquid sweetener), coconut flour and vanilla (optional) in your food processor.
- From here: either form walnut sized balls and roll into coconut flour, inserting a hazelnut on top or place 1-2 tbsp of the mixture into silicone baking cups and put the hazelnut on top of each.
- Whatever you decide – I’m proud of you. Then place in a Tupperware and put in the fridge for 1 hour to firm.
These keep in the fridge a few days (I usually have eaten all in 3 days).
