When life gives you lettuce, wrap something tasty in it. This everlasting wisdom has been haunting me during my waking and sleeping hours for almost a year. Still, it took over 8 months and these vegan lettuce wraps to discover how heavenly something wrapped in lettuce can taste.

Lettuce wrapped around smooth fresh avocado sauce with the texture of a cloud, creamy velvet-like yet spicy bean dip, fluffy quinoa and crunchy fresh fragrant salad – that’s all I’ve been wanting all my life. I just didn’t know it. Salad wrapped in a salad, roll your eyes all you want, it doesn’t get any better than that.

Nothing and I mean nothing compares to these quinoa-bean lettuce wraps and I mean it in a very Sinead O’Connor way.

I am in tears writing this, wondering if I should shave my head or not and biting my nails and spitting them out on my wooden floor.

Why?

Well, I like nails on the floor. But also it’s 9 pm and in Germany, at this time even the internet is closed. I don’t have any beans or quinoa to make these wraps right now and the soonest I can buy groceries is tomorrow at 8 am.

My leftovers are non-existent.

My mind is in overdrive. I am going insane. I feel used, seduced and abandoned by these quinoa bean lettuce wraps.

Well, I guess I should’ve known better. No garlic-rich, onion-loaded, bean-wealthy, quinoa-successful and avocado-luxurious lettuce wrap can stay in your life forever.

But I will survive tonight (somehow!!!!)  – tomorrow is a new day and I will make them again. All I’ll need are cooked quinoa, a lettuce, a can of kidney beans, avocado, lemon, garlic, some veggies, onions, some chili powder to spice up my life and gut and some functioning taste buds.

I’ll make them for lunch and for dinner.

Who am I kidding?

I’ll probably also make them for breakfast – it’s Saturday, who cares if I ate 2 cloves of anti-viral detoxifying garlic?

I made these last Saturday and as you can tell – I am obsessed with them.

But beyond their addictive properties that turn a normal human being like me into a complete psychopath, they’re super healthy, suitable for weight loss and great for skin, hair and nails.

So you might be a psychopath, but at least you’ll be a physically healthy attractive one.

And isn’t that the dream?
