Make these healthy strawberry banana oatmeal pancakes without flour and without dairy for a quick and easy healthy breakfast that everyone will love.

And by everyone I mean you because this banana oatmeal pancake recipe serves only one person. That makes it easier to adjust servings right? Just multiply the ingredients by however many servings you want to make and it should be good!

This is what happens when I have 1) a cold, 2) some ground oats, 3) a banana and 4) fresh strawberries -> the best healthy high-fiber breakfast: oatmeal pancakes with banana and strawberries for one (…sick person)

This month I’ve been all about one thing.

Strawberries.

My dad has been giving me some super super fresh strawberries from his garden. He’s got them growing there wild and nothing can stop them.

The only problem?

You blink and those almost ripe strawberries turn into mold.

To prevent this, I’ve been receiving bags with tiny, almost ripe strawberries for a week now. Thanks, dad!

And I’ve been eating them, to the best of my abilities.

But then, like every summer, once we turn on the AC, BOOM, I get sick.

And when I’m sick I don’t know how and why but the only thing I want to eat is bread, pizza, pancakes and nothing fresh. Nothing that can actually make me get better.

On the 3rd day of sickness, I decided to stop that self-sabotage, made myself a green smoothie with spinach, banana, and strawberries and then these delicious oatmeal pancakes with banana, strawberries for one… sick person.

Perfect Healthy Breakfast Idea

These strawberry banana oat pancakes are the perfect healthy breakfast, even if you don’t have a cold, really.

Now, granted, my taste buds were on a break, but I still believe these were super good. In fact, I’ve made them again and again and they’re actually super delicious.

Note here, these pancakes are not huge, alright? They’re cute and small and 6 of them make the perfect serving for one. At least in my opinion, but I also eat a lot.

The expression “6 small portions a day” means nothing to me. It’s a complete, dark and tall stranger, I’ve never met and never will.

OMG, did I mention I’m still sick while I’m writing this. Brain fog.

What’s In These Strawberry Banana Oatmeal Pancakes?

Only good easy-to-find things:

  • oats
  • an egg
  • banana
  • walnuts
  • strawberries
  • cinnamon
  • honey
  • baking powder

How Are These Strawberry Banana Oatmeal Pancakes Healthier?

I used no flour & no sugar. Instead – ground oats for flour, honey & banana for sweetness.

If you’re dairy- and gluten-free you’ll love this pancake recipe as there’s no milk, no yogurt or gluten in there.

These flourless oatmeal pancakes with strawberries and banana are high-fiber, refined sugar-free, dairy-free, gluten-free (use GF oats) and a good source of protein, vitamins, and minerals.

Overall, I wouldn’t say these are healthier than a smoothie or a salad, but they’re much more nutritious than a regular pancake, so if you need pancakes in your life now and could use some extra nutrients – there you go!

How To Make Strawberry Banana Oatmeal Pancakes

So what you do with these pancakes:

You mix an egg, banana, coconut oil + some honey in a small mixing bowl.

Then you add baking powder, cinnamon, ground oats and mix the whole thing.

But then, you’ve got some other stuff up your sleeve: some chunks of strawberries and some chopped walnuts.

Throw them in and you’re ready.

Then you take out a non-stick pan and turn on the heat on medium to medium-high.

Take a ladle, or I used here a large spoon (the one you’d use in cooking, I don’t know what it’s called) and you pour in the mixture to make small pancakes.

Then after you’re done on the one side – flip the pancake, let cook for 30 sec to 1 minute and make the next batch. My pan wasn’t huge so I made 2 rounds of pancake cooking.

How Small Should The Pancakes Be

Well, the palm of your hand. That’s a good size. Although, I might have huge hands. At least according to my hairdresser, who is a tiny Indonesian man. One time he compared his gentle hand to mine, laughed out loud and said to me:

–  “Wow your hands are huge! Look at them compared to mine” – he said, not noticing my eyes watering.

–  “I went riding last week without gloves” – I replied trying to pretend I’m not the Hulk, but Scarlett.

Ahhhhh, highlight of the year.

Kinda reminded me of the King of Queens episode where Carrie was portrayed in a painting with a huge arm and raisin-sized eyes.

How Many Pancakes Does It Make?

Okay, I don’t think I have huge hands, but if you’re a small Indonesian man with beautiful, soft hands – then your pancakes might turn out a little smaller.

Which means you’ll have 7 and not 6. Lucky you.

How To Serve The Strawberry Banana Oatmeal Pancakes

Top with whatever you want!

I did honey, strawberries and peanut butter, but somehow peanut butter felt like the third wheel, so won’t use it next time.

Honey and just honey would be perfect though.

I was wondering how to show you that these flourless oatmeal pancakes are actually done and fluffy, but that’s a challenge when they’re on a plate.

So here’s me sticking them on a fork.
